Peel parsnips and cut in half lengthways (quarter if very large). Place in a bowl and drizzle with oil, salt and pepper, stirring well to coat.

Tip onto a baking tray, lined with a non-stick baking sheet, and slide into the centre of the roasting oven. Roast for 35-40 minutes until tender.

Mix together equal quantities of mustard and honey to make a glaze and drizzle over the parsnips. Return to the oven for 5 minutes until golden and sticky.
Aga range cooker tips:
- Once coated in the glaze, the parsnips brown very quickly so keep an eye to ensure they don’t burn.
- If you have a baking oven, you can also cook the parsnips at the top of the baking oven.
