Description: 

Drop scones are a regular feature in our household, as a weekend treat they give us a great excuse to slow down a little and eat a breakfast together. With lots of toppings, chatter, and sticky faces it never disappoints. We even dress them up for birthday breakfast celebrations!  

I like to keep frozen soft fruits just for these occasions, and I heat up with a little honey for a tart warm sauce. This I serve with yogurt and oodles of honey!

COOKS SET hob liner simmering plate liner suitable for bread baking in an aga range cookerThis recipe is the perfect fit for our Cooks Set! If you want a slightly larger diameter, or if you have a total control,choose this set. 

Relax with this recipe - after a few breakfasts & pancake days you will work out your preferred 'mix'!

Ingredients:

  • Three free range eggs
  • Enough plain flour to bring to a thick pourable paste (around 140g per medium egg)
  • 2 Tbsp of caster sugar
  • 1 Heaped teaspoon of baking powder
  • Milk, enough to bring to a thick pourable paste (around 180ml per egg)
  • A pinch of salt
  • Around 25g of butter melted on the back of your hob in a little dish (about 1.5 cm of a block) 

You may need...

  • An angled spatula
  • A mixing bowl/or large jug & a whisk (or a food processor)
  • A cooks set
  • A jug for pouring

Method:

  1. Beat your eggs in your jug or mixing bowl with a whisk
  2. Add flour tablespoon by tablespoon, bringing together with the eggs. It will reach a point when it becomes quite stiff, now start adding milk too. Whisk together until you have a thick paste, any small lumps will disappear on cooking, but large globules must be banished! If you are using a food processor, just bung it all in, but do not over mix! 
  3. Add your melted butter, baking powder, salt and sugar - mix
  4. You can add a few raisins now, or lemon zest, spices like cinnamon and nutmeg are great too.
  5. Chill in the fridge for 20 mins, just helps 'keep it together' on the hotplate, just as great used straight away too! I am sure by this stage you will have eager faces watching & waiting! 

To cook - take your seasoned liner  and pop it on your simmering plate, let it warm through for about 30 seconds. Transfer your mix to a jug so you can pour your cakes direct. Each drop scone pancake will use around 2 Tbsp of mix, so you should be able to fit 4 easily with room on your simmering plate. As soon as you see bubbles appear on the top surface and the edges have firmed up (not darkened) then you can flip over. Have a plate keeping warm in your simmering oven to store as you go, so that you can all eat together.
